1、個重要的因素便是溫度。紅酒較佳的保存溫度應該是13℃左右。溫度較好保持恒定,否則會對酒的質(zhì)量產(chǎn)生非常大損害。隨著溫度的升高,酒體的成熟所需時間也會減少,酒的風味會越來越比較不光滑,還可能因過分空氣氧化造成酒的變質(zhì)。

2、環(huán)境濕度的影響主要作用于瓶塞,環(huán)境濕度一般在60%—70%比較適合。環(huán)境濕度太低,瓶塞會越來越干燥,影響密封實際效果,讓更多的空氣與酒接觸,加速酒的空氣氧化,導致酒質(zhì)量下降。當然,環(huán)境濕度過高也不好,瓶塞發(fā)霉也會破壞酒的質(zhì)量。

5、還有便是酒桶的放置。大家都知道紅酒要橫放,其實,瓶口向上傾斜15度也是可以的。對于需要儲存長時間的紅酒,桶口向下的放置方法是不可取的。因為紅酒存放時間長了會有沉定,平放或者瓶口向上略微傾斜,沉定就會集聚在底部;而如果瓶口斜放,沉定就會集聚在瓶口處,時間長了會粘在那里,倒酒的時候,會連沉定一起倒入酒杯,影響酒的口感。
